- **Vinification:** All stages, vinification, sparkling, manual remuage and dégorgement, take place at the estate's winery. After the first fermentation in steel tanks, the wine undergoes tirage in spring (addition of sugar and yeast, then bottling, sealed with a crown cork). During refermentation in the bottle (prise de mousse) the bottles are kept lying down at about 13°C. The sparkling wine then rests on the lees for 24 to 120 months, refining and acquiring taste-olfactory complexity, before remuage separates the wine from the lees. Disgorgement (dégorgement) follows: bottles are placed upside down in a cylinder at -20°C to freeze the deposit, which is expelled on uncorking; the lost liquid is topped up with the same wine, without added sugar, giving a Metodo Classico Pas Dosé. The bottle is then sealed with a cork and a metal cage.
