- **Vinification:** Fermented in steel vats for about 15 days at up to 28°C; the vat is filled partly with whole, uncrushed bunches so fermentation begins in the berry, giving a fruitier wine, with numerous daily pump-overs for optimal extraction. About half the wine is aged in 225-litre French oak barriques for about 6 months, the rest stays in steel.
