- **Vineyard planting:** Guyot training, 4500 vines per hectare, vineyard age 27 years.
- **Vinification:** Hand-harvested in the first two weeks of September, the grapes are pressed immediately after picking. Fermentation takes place as for the white wines, in temperature-controlled steel tanks at 16 to 18C. The following spring the wine undergoes tirage for a second fermentation in steel autoclaves at low temperature, to favor fermentative aromas and a fine, persistent perlage. This is followed by a slow 30-day aging on the noble lees.
