- **Vineyard planting:** Guyot training, 4000 vines per hectare, average vine age 25 years.
- **Vinification:** The grapes are carefully hand-harvested, generally from the second ten days of September. Vinification begins with gentle whole-bunch pressing using a state-of-the-art Bucher Inertys press, which avoids oxidation and preserves the grape's aromas. Fermentation is started with selected yeasts and takes place at about 18C in temperature-controlled stainless steel tanks. After alcoholic fermentation there is a brief period on fine lees with light stirring. Bottling takes place the spring after harvest. Aged in bottle for 2 to 4 months.
