Sour cherry and liquorice stand out on the nose, with light vanilla and balsamic notes. On the palate sour cherry and liquorice dominate, with balsamic notes in a pleasantly persistent finish.

## Food pairings

Ideal with succulent dishes, baked pasta, intense soups, meat, roasts, grills, ribs, game, dishes with white truffle, and aged, spicy cheeses, especially Parmigiano Reggiano 24, 36 and 48 months. A good meditation wine with dark chocolate. The producer suggests opening the bottle an hour before drinking and using a decanter.
