- **Vinification:** Destemmed and pressed very gently, fermented at strictly controlled temperature for the sparkling take-up. Once 5 degrees of alcohol are reached, fermentation is stopped by cooling, followed by tartaric stabilisation and sterile bottling.

## Summary

Aromatic intensity and an elegant balance of sweetness, minerality and freshness, the result of a later, optimal ripening that keeps the acidity while developing the aromas.

## Tasting notes

Pale straw yellow with light greenish reflections, hinting at its youth and exuberance. Well-integrated terpenic notes bring out classic citrus character, with elegant white flower and musky notes. On the palate it is fresh, with sugar and glycerine nicely offset, and a long, balanced finish for a Moscato.

## Food pairings

Good with classic end-of-meal sweets, whether leavened or fried pastries, and also with sweeter, lightly salted cured meats, or delicate, creamy sparkling desserts.
