- **Vinification:** Frizzante, ancestral method. Soft pressing, fermentation started in temperature-controlled stainless steel and bottled before the sugars run out, finishing on the lees in bottle. At least 12 months in bottle before sale; not disgorged, so it is cloudy with a sediment. Alcohol 12.5%, residual sugar 1.5 g/l, total acidity 5.30 g/l.

## Summary

A cloudy ancestral-method frizzante from Cortese, bottled mid-fermentation and left on its lees.

## Tasting notes

Opalescent yellow with gentle, generous bubbles scented with bread crust, yeast and citrus. Fruity and spicy, with golden apple, nutmeg and white pepper. Savoury and citrusy on the palate, with a velvety, muscular body.

## Food pairings

Fried fish and vegetables, pesto dishes, orecchiette with turnip tops, bagna cauda, ricotta and fresh cheeses, baked vegetables, chicken salads, pork skewers and wurstel; to try with gourmet pizza.
