- **Vinification:** Made by the metodo ancestrale: a light pressing of the grapes extracts the natural yeasts present on the skins, followed by fermentation in temperature-controlled stainless steel. Fermentation is first slowed and then stopped, to resume after bottling with no further addition of sugar or yeast; the enzymes and yeasts sealed in the bottle build up the CO2 that gives the wine its sparkle.
