After drawing off, decanted into stainless steel tanks for the precipitation of deposits, remaining there until the end of sugar and malolactic fermentations. Aged in small French oak barrels, 35% new and 65% used, for 24 months. Then blended in steel tanks for 6 months, bottled and left to mature for about a year before release.
