- **Vineyard planting:** Espalier vineyards with Guyot pruning, about 4,500 vines per hectare, vines aged 20 to 35 years.
- **Vinification:** Grapes from different parts of the vineyard are processed separately: destemmed and fermented at controlled temperature in stainless steel, started with a pied de cuve of indigenous yeasts, with pumping-over and delestage varied to the progress of fermentation and an extended post-fermentation maceration using the submerged-cap method. Racking and spontaneous malolactic fermentation follow in steel. Aged 20 to 24 months in oak barrels, then further in bottle before release.

## Tasting notes

Brilliant garnet red. Aromas of ripe cherry, wild strawberry and dried flowers, with citrus peel and sweet spice over a subtle earthy note. Medium to full-bodied on the palate, enveloping and round, with silky, fine-grained tannins and a long, spicy finish.

Boiled, braised and roast meats, game and mature cheeses; also tried with dark chocolate.
