- **Soil:** Medium-textured, limestone-rich soil with thin layers of sand and grey sandstone; weakly alkaline.
- **Exposure:** South-west, altitude 330 m a.s.l.
- **Harvest:** Beginning of September, hand-harvested into crates during the first hours of the day.
- **Vineyard planting:** Espalier vineyards with Guyot pruning, average density about 4,000 vines per hectare.
- **Vinification:** Destemmed grapes are macerated on the skins for 3 days at low temperature in steel without added sulphur dioxide, then soft-pressed, with the must split into first- and second-press fractions, decanted and racked. A starter of indigenous yeast from the same grapes is added and fermentation continues at 18-19°C, with part of the must finished in barrel; malolactic fermentation reaches about 80%. Ages on its fine lees for 12 months with periodic manual stirring, then a further 12 months in bottle before release.

## Summary

100% Favorita from a single parcel in Diano d'Alba, cold-macerated on the skins for three days and aged a year on the lees, FAMA is the estate's more structured expression of the variety.

## Tasting notes

Light straw yellow, with aromas ranging from floral to spicy: white flowers such as linden and jasmine, with citrus and spice recalling thyme. Good acidity and a sense of structure and progression on the palate.
