- **Vinification:** Grapes from each vineyard are processed separately: destemmed and fermented at controlled temperature in steel with 10 to 12 days' maceration, pumping-over and delestage at varying intervals, then drawn off with malolactic fermentation completed in oak barrel and natural tartaric stabilisation over winter. Aged 13 months in a 3,000-litre French oak barrel, finished in concrete, and bottled.

## Tasting notes

Intense purple red, with light hints of liquorice and red fruit on the nose, cherries and spirit-soaked black cherries on the palate. Good structure, vibrant acidity, freshness, balance and persistence.

Cold cuts, pork dishes, veal cheek and aged cheese; also good with fatty fish.
