- **Vinification:** Hand-harvested grapes are crushed and fermented at about 18C with 2-3 days of maceration and frequent pump-overs; the wine is then racked off the skins and finishes fermenting off the skins at 18C. After fermentation it clarifies by static decanting until end of winter, rests in steel until spring bottling, then ages about a month in bottle.
