- **Vinification:** The grapes are gently pressed in temperature-controlled stainless steel tanks, where they begin fermenting spontaneously; fermentation runs at 30°C and maceration lasts 10 to 12 days, with the must pumped over and punched down at least four times a day. After pressing off, malolactic fermentation also takes place in steel. Each variety is vinified separately and the wines are blended after malolactic fermentation. The wine ages 24 months in French barriques, then rests a further 12 to 18 months in bottle.
