- **Vinification:** The grapes are gently pressed in temperature-controlled stainless steel tanks, where they begin fermenting spontaneously; fermentation runs at 28 to 30°C and maceration lasts 15 to 20 days, with the must pumped over and punched down at least four times a day. After pressing off, malolactic fermentation also takes place in steel. The wine ages 12 months in used French barriques and large casks, then rests a further 6 to 9 months in bottle.
