- **Vinification:** The grapes are gently pressed in temperature-controlled stainless steel tanks, where they begin fermenting spontaneously; fermentation runs at 30°C and maceration lasts 12 to 14 days, with the must pumped over and punched down at least four times a day. After pressing off, malolactic fermentation also takes place in steel. The wine ages 15 months in French barriques, then rests a further 10 months in bottle after bottling.
