- **Vinification:** Vinified after the 1606 notes of Gian Battista Croce, jeweller to the House of Savoy: about a fifth of the grapes are fermented as whole clusters, then, after a short maceration, the wine is drawn off the skins to finish fermentation without them, and it is bottled straight after fermentation to keep an off-dry finish and light effervescence. Brief steel ageing, bottled 14 February 2025.

## Summary

Giuseppe Vaira's re-creation of a Nebbiolo-making method recorded in 1606 by Gian Battista Croce, bottled right after fermentation for an off-dry, lightly sparkling style.

## Tasting notes

Bright ruby red. Nose of raspberry, dog rose, fresh berries and sweet spice. Palate enriched by white pepper and fresh citrus zest and wild strawberry, with a lively carbonic bite and silky tannins.
