- **Vinification:** After crushing, the skins are separated at once and the must is chilled to prevent unwanted fermentation. It is held in refrigerated autoclaves until fermentation is started by bringing it to about 20 °C. Fermentation is stopped by refrigeration (-2 °C) at about 5.5% alcohol, then filtered and bottled under sterile conditions. Aged in bottle, to be drunk within 1 year.

Intense straw yellow. Floral and fruity aromas of acacia flower, wisteria and honey. Sweet, aromatic, fresh, moderate acidity; natural bubbles add freshness.
