Bottling for the second fermentation follows after 5 months. The wine spends 24 months on the lees, is disgorged, and rests a further 3 months in bottle before sale. Alcohol 13.2% vol.

## Tasting notes

Cherry pink with fine, persistent bubbles. Intense, fruity and floral nose, with delicate red fruit and violet. On the palate cherry, blueberry and currant, with a silky balance of acidity and softness.
