The free-run must, from low-pressure pressing, is chilled to 0°C, filtered and held there until about a month before bottling, when a slow fermentation is allowed to run to 5-5.5% alcohol.

Aromatic, lightly sparkling (frizzante) wine, straw yellow of varying intensity, with a musky bouquet recalling freshly picked grapes in the glass.
