- **Harvest:** Selective harvest in several passes at full ripeness
- **Vineyard planting:** Well-exposed hillside above 300 m with a medium-steep slope; vines average over 30 years, surrounded by small woods
- **Vinification:** Hand-picked into small perforated crates. Pressed and fermented straight away with the house's own selected yeasts in small temperature-controlled vessels, then malolactic fermentation and 4 months in seasoned small oak barrels to keep the aromas clean. Cold-stabilised over winter and bottled in early spring after the first full moon of March. Around 13.5% alcohol.
