- **Vinification:** Grapes delivered in small 20kg crates; part is soft-pressed for static decantation at 8-10°C, then racked and fermented at 16-18°C with indigenous yeasts. A further 20-30% of the grapes is fermented in alternating layers of whole bunches and destemmed grapes. Both parts age in steel on fine lees until the following spring, then are blended before bottling.

## Tasting notes

Deep straw yellow with greenish highlights. Aromas of exotic fruit, ripe pear, hawthorn and acacia blossom and helichrysum honey. Enveloping, soft and sweet on the palate, with fresh, savoury acidity.
