- **Vinification:** Hand-picked grapes are partly pressed and partly destemmed; destemmed grapes undergo 12 hours of cryomaceration at 5°C to enhance aromas. Gentle pressing extracts only the flower must, which is cold-settled off its skins. Fermentation begins at 18°C and is stopped at 5.5% alcohol; the wine rests on fine lees for at least 10 months.

## Tasting notes

Straw yellow with golden hues; intense aromas of ripe pear, white peach, honey, robinia flowers, lime, orange, sage and lemon. Full and dense on the palate, balancing acidity with residual sweetness and light petillance.

Excellent with aged or blue cheeses, foie gras, glazed or sweet-and-sour meats, caramelized or fried vegetables, and desserts.
