- **Vinification:** Nebbiolo grapes destined for the Spumante are harvested in mid-September and left to rest in a temperature and humidity controlled room to reach the best maturation. The grapes are vinified as a white wine, using only the best part of the must (the 'mosto fiore'). Fermentation occurs with indigenous yeasts, part in stainless steel tanks and part in wood. The Metodo Classico ages in the cellar at controlled temperature on its indigenous yeasts for about 36 months, with the 'coupe de poignee' made by hand, then disgorged with the date written on the back label.
