- **Vinification:** Hand-sorted bunches are chilled with dry ice, destemmed and crushed, then the must rests 2 to 4 hours in the press under nitrogen for colour extraction by the saignée method before gentle pressing at up to 45% free-run yield. It ferments in temperature-controlled steel tanks and rests 6 months on the lees with bâtonnage, then undergoes the classic method second fermentation in bottle, aged on the lees for at least 140 months with no dosage.

## Summary

The saignée-method Rosé counterpart to Zero 140, aged almost 12 years on the lees, which the estate says tames the power of Pinot Noir into a long, complex expression of the Alta Langa terroir.

## Tasting notes

Pale rosé with onion-skin nuances and a fine, persistent perlage, a complex, broad nose where bread crust and candied fruit alternate with lime honey and small red fruit still perceptible after the long ageing on the lees, and a palate of great freshness and acid tension over mineral and toasted hazelnut notes, with striking length.

Good as an aperitif, with fish and shellfish dishes, oysters and caviar.
