- **Vinification:** Hand-sorted bunches are chilled with dry ice, destemmed and crushed, then the must rests 2 to 4 hours in the press under nitrogen for colour extraction by the saignée method before gentle pressing at up to 45% free-run yield. It ferments in temperature-controlled steel tanks and rests 6 months on the lees with bâtonnage, then undergoes the classic method second fermentation in bottle, aged on the lees for at least 60 months and released with no dosage.

## Tasting notes

Pale rosé with onion-skin nuances and a fine, long-lasting perlage, a complex, deep nose of small red fruit such as raspberry, strawberry, blueberry and redcurrant that reveals its Pinot Noir saignée origin, fading into bread crust, white fruit and lime blossom, and a palate built on great freshness and acid tension with a long, mineral, saline finish.

## Food pairings

Good as an aperitif, with fish and shellfish dishes, and excellent with prosciutto and salmon dishes.
