- **Vinification:** Hand-sorted bunches are chilled with dry ice to limit oxidation and sulphite use, then destemmed, hand-sorted again and gently crushed with no use of screw augers. The must ferments in temperature-controlled steel tanks and oak vats with a medium-length, délestage-aided maceration on submerged cap for over 18 days, then ages 18 months mostly in medium oak barrels of 2,500 to 4,000 litres with a small part in barriques.

## Tasting notes

Intense ruby red with typical violet reflections, a broad, complex, vinous nose of violet, cherry, redcurrant, spice and tobacco with strong persistence, and a rich, redcurrant-fruited palate, surprisingly fresh and velvety, with a fine structure and a pleasant silky acidity softened by oak ageing.
