- **Vinification:** Hand-sorted bunches are chilled with dry ice to limit oxidation and sulphite use, then gently pressed, with part crushed and cold-macerated overnight in the press, with no use of screw augers. The must, obtained by soft pressing of whole and crushed bunches under nitrogen, ferments in temperature-controlled steel tanks, then ages on its own lees in steel for 6 to 7 months before further ageing in bottle.

## Tasting notes

Straw yellow with typical greenish reflections, a broad, complex nose of wildflowers, lavender, sage and fresh fruit such as citrus, white peach and apricot, and a fresh, mineral, intense palate with good body balanced by pronounced acidity and very long persistence.

Fish, shellfish and sushi, also holding up to strongly flavoured sauces; excellent as an aperitif.
