- **Vinification:** Hand-sorted bunches are pressed in an inert nitrogen atmosphere for a free-run yield of about 55%; the must ferments in temperature-controlled steel tanks and rests 6 months on the lees with bâtonnage. The classic method second fermentation happens in bottle with extended ageing on the lees until full maturity; the dosage liqueur added after disgorgement follows the estate's own recipe of reserve wines and sugar (4.5 g/L), with no distillate.

## Tasting notes

Straw yellow with golden reflections and a fine, persistent perlage, a complex, attractive, pleasantly incisive nose of flowers, white-fleshed fruit, bread crust and minerals, and a complex, vertical palate with citrus notes, vibrancy, elegance and a long finish, its typical Alta Langa edge tamed by the parcel blend.

An aperitif spumante above all, also enjoyed throughout a meal.
