- **Vinification:** Hand-sorted bunches are chilled with dry ice, destemmed and crushed, then the must rests 2 to 4 hours under nitrogen for colour extraction by the saignée method before gentle pressing. It ferments in temperature-controlled steel tanks and rests 6 months on the lees with bâtonnage, then undergoes the classic method second fermentation in bottle for at least 36 months; the dosage liqueur added after disgorgement follows the estate's own recipe of reserve wines and sugar (7 g/L), with no distillate.

## Summary

## Tasting notes

Bright rosé with onion-skin nuances and a fine, persistent perlage, a broad, crisp, elegant nose of strawberry, redcurrant, wildflowers, cotton candy and bread crust, and a fruity, many-sided, dry, complex and elegant palate in perfect balance, with a long, pleasant mineral finish.

## Food pairings

Good as an aperitif, with fish and shellfish dishes, and excellent with prosciutto and salmon dishes.
