- **Vinification:** Hand-sorted bunches are chilled with dry ice to limit oxidation and sulphite use, then destemmed, hand-sorted again and gently crushed with no use of screw augers. The chilled must ferments in temperature-controlled oak vats with an extended, délestage-aided maceration partly on submerged cap for over 25 days, then ages 18 months mostly in medium oak barrels of 2,500 to 4,000 litres with a small part in barriques.

## Summary

A single-vineyard Roero from the Oesio site in Canale, made only in exceptional years and in small volumes, which the estate says shows Nebbiolo's finer, more elegant side on this sandy-clay soil.

## Tasting notes

Ruby red with faint orange reflections, an intense, elegant nose of red fruit and floral aromas with clear Nebbiolo character, spice and coffee notes, and a fine, elegant, medium-to-structured, well-balanced palate with pleasant tannins and a long finish.

## Food pairings

Porcini risotto, braised meats, aged cheeses and truffle dishes, with dark chocolate to finish; a meditation wine.
