- **Vineyard planting:** Guyot-trained vines 15 to 30 years old, yields around 6,500 kg/ha, 100% hand-harvested, farmed with sustainable viticulture.
- **Vinification:** Hand-sorted bunches are chilled with dry ice to limit oxidation and sulphite use, then destemmed, hand-sorted again and gently crushed with no use of screw augers. The chilled must ferments in temperature-controlled oak vats with an extended, délestage-aided maceration for over 25 days; the wine then ages mostly in medium oak barrels of 2,500 to 4,000 litres with a small part in barriques, followed by a long further ageing in bottle before release.

## Summary

Oltredieci, meaning "beyond ten", is released from the same Oesio vineyard only in outstanding vintages and only after more than a decade of ageing, which the estate presents as proof of the site's potential with Nebbiolo.

## Tasting notes

Garnet red with subtle garnet reflections, an intense, elegant nose of violet, small red fruit and macerated cherries with floral notes, and clear Nebbiolo intensity of spice, coffee, leather and dried flowers, with a fine, elegant, well-balanced palate, pleasant tannins and a long finish.

## Food pairings

Porcini risotto, braised meats, aged cheeses and truffle dishes, with dark chocolate to finish; a meditation wine.
