- **Vinification:** Hand-sorted bunches are chilled with dry ice to limit oxidation and sulphite use, then destemmed, hand-sorted again and gently crushed with no use of screw augers. The must ferments in temperature-controlled steel tanks and oak vats with an extended, délestage-aided maceration partly on submerged cap. The wine is then aged about 22 months in medium oak barrels of 2,500 to 4,000 litres.
