- **Vinification:** Hand-sorted bunches are chilled with dry ice to limit oxidation and sulphite use. Part is destemmed and gently crushed after a second hand-sort, the rest goes whole-bunch into the fermenter for carbonic maceration, with no use of screw augers throughout. Fermentation is medium-to-long with little movement of the solids to preserve the whole bunches, followed by about 26 months' ageing in a 1,000-litre oak cask.

## Tasting notes

Intense ruby red with faint purple reflections, a broad, intense and complex bouquet where a youthful character from whole-bunch maceration meets tertiary aromas of rose, violet, raspberry, liquorice, spice and tobacco, and a broad palate with tight but still vibrant tannins and a long, characterful finish.
