- **Vinification:** Hand-sorted bunches are chilled with dry ice to limit oxidation and sulphite use, then destemmed, hand-sorted again and gently crushed with no use of screw augers. The must ferments in temperature-controlled steel tanks with a short, 10-day maceration using délestage, and the wine is aged only in bottle for about 3 months before release.

## Summary

Named after the Piemontese dialect meaning of Dolcetto, "sweet in its acidity" compared with Barbera, Dosso is the estate's everyday red, aged briefly in bottle rather than wood.

## Tasting notes

Deep ruby red, a fruity, vinous, delicious nose of small red fruit, and a soft, fine, medium-bodied palate with the pleasant flavour typical of Dolcetto.
