- **Vinification:** Hand-sorted bunches are chilled with dry ice to limit oxidation and sulphite use, then destemmed, hand-sorted again and gently crushed with no use of screw augers. The must ferments in temperature-controlled steel tanks with a medium-length maceration of over 18 days using délestage, then ages about 14 months in medium oak barrels of 2,500 to 4,000 litres.

## Summary

## Tasting notes

Intense ruby red with typical violet reflections, a broad, elegant, fresh nose rich in small red fruit, violet and ripe grape with pleasant spice notes, and a fine, fresh, medium-structured palate, very well balanced, with a soft acidity and a long spiced finish.

Pasta, risotto, roasts, cheese, cured meats and the local bagna cauda.
