> Sweet, Moscato d'Asti DOCG by [Emilio Vada](https://ilvinobello.com/wineries/emilio-vada.md), Asti, Piemonte, Italy. From Il Vino Bello (https://ilvinobello.com/wines/emilio-vada-campbianc).

- **Producer:** Emilio Vada
- **Style:** Sweet
- **Denomination:** Moscato d'Asti DOCG
- **Grape:** Moscato bianco di Canelli 100%
- **Soil:** Calcareous-clay
- **Harvest:** First decade of September
- **Vineyard planting:** Guyot training
- **Vinification:** The grapes are softly pressed so that only the most aromatic juice is used. The must goes into an autoclave, where fermentation starts by raising the temperature and letting the natural yeasts work. When the alcohol reaches 5 degrees and acidity, sugar and alcohol are in balance, the temperature is lowered and fermentation stops. The wine is then microfiltered and bottled at about 2 atm.
