- **Vinification:** Grapes are hand-selected for ripeness and concentration, then stored for about a month in the estate's withering room, sampled daily to track dehydration and weight loss until crushing. After crushing and destemming, the must ferments in temperature-controlled steel tanks; the wine then ages 24 months in small new French oak barrels, bottled two years after harvest.

Dry, but keeping the enveloping notes of chocolate, blackberry jam, ripe cherry and tobacco typical of the drying process; rich and smooth, with the natural acidity of Barbera preserving drinkability and freshness.
