No malolactic fermentation. Seven to ten months on the lees in barrique with weekly batonnage for the first four to six months, bottled the following spring-summer, six months in bottle. First vintage 2011. About 4,000 bottles (0.75 l, 1.5 l).

## Tasting notes

Pale straw yellow with golden reflections. Complex, with mineral notes, ripe fruit and toasty hints in good harmony. Savoury, full, persistent, with good structure and freshness.

## Food pairings

White meats and structured fish such as salmon; also worth trying with oysters or fresh to medium-aged goat cheeses.
