- **Exposure:** West facing, at about 230 metres above sea level.
- **Harvest:** Hand-picked.
- **Vineyard planting:** Guyot-trained.
- **Vinification:** Soft pressing, first fermentation of the free-run must for 12 to 15 days at a controlled temperature of 15 to 16°C in steel tanks, then rested on its own lees for 2 to 3 months. A second fermentation follows in steel tank for 5 months at a controlled temperature, with added sugar to build the sparkle.
