- **Vinification:** After a brief cold maceration, the grapes are pressed and the must begins alcoholic fermentation. Part ferments in steel at controlled temperature with selected yeasts, the rest is left to ferment with indigenous yeasts in oak barrels. After both fermentations, the wine rests on its lees, and is only blended just before bottling. Once bottled, it rests in the cellar for a minimum of 18 months before being ready for sale.

## Summary

A personal, longer-ageing interpretation of Moscato d'Asti DOCG, fermented partly with indigenous yeasts in oak and rested at least 18 months in bottle before release, developed to move past the classic linalool-driven aroma of young Moscato.

## Tasting notes

Bright, straw yellow with light golden reflections. Small bubbles that dissolve in the mouth with a pleasant tactile sensation. Balanced, fine and persistent mousse. On the nose, alongside the typical aromatic character of Moscato, a mix of varietal sensations such as musk, sage and white flowers, and ageing-derived notes of yellow fruit, ripe apricot and vanilla. Surprisingly and pleasantly sweet on the palate, not cloying, balanced by a pronounced acidity; very persistent, with mineral and sapid notes. Recommended in a coupe.
