- **Vinification:** After soft destemming, fermentation and tumultuous maceration run 10 to 12 days at a controlled temperature of up to 30°C, with short, frequent pump-overs, and malolactic fermentation in stainless steel. The wine ages 8 to 10 months in French oak, part in tonneaux and part in barrels, then rests at least 3 to 4 months in bottle, releasing around the middle of the second year after harvest. It comes from a selection of grapes from specific portions of the vineyard chosen for soil, vine age and exposure.
