- **Vinification:** Maceration on the skins for about 8 days in steel tanks, malolactic fermentation with natural indigenous yeasts, extremely low sulphite dosage. Aged 18 months in steel tanks, released at least 24 months after harvest.

## Tasting notes

Very intense, bright ruby red that pleases the eye. Intense on the nose with hints of ripe red plum, a delicate spicy note and a slight scent of medicinal herbs. Rich and savoury on the palate with a light minerality, tasty and persistent, rightly balanced in acidity and tannin.

## Food pairings

Ideal with cured meats and semi-mature cheeses. Also excellent with strongly flavoured meats.
