After 10 days racked into 500-litre French oak barrels to slowly complete alcoholic fermentation; malolactic fermentation induced and completed at controlled ambient temperature. 30 months of ageing in wood, then 6 months in oeuf de Beaune concrete eggs. Bottled after a single, very gentle filtration.

## Tasting notes

Bright ruby red gradually developing light garnet hues. Delicate, persistent bouquet of red berry fruits with notes of ripe black cherry and subtle spice. Full-bodied, bold and well balanced.
