- **Vinification:** Destemmed and gently pressed without pressing the berries, so only the free-run flower must is used. The must stays briefly on the skins for a light salmon-pink colour. First fermentation in temperature-controlled steel tanks, then about 9 months of ageing. Second fermentation in bottle, then at least 36 months on the lees. Riddled by hand for about 18 days.

## Tasting notes

Salmon-pink colour. Precise aromas of citrus peel and marzipan. Intense and well structured on the palate, with notes of peach and thyme and a creamy, persistent perlage.
