Natural decanting and further rackings, always in steel, with a final batonnage to keep the noble lees in suspension; aged two years on its lees without racking. Cooled to -3C in a thermo-controlled tank, then final filtration before bottling.

## Tasting notes

Intense straw yellow with greenish highlights. Very fine on the nose, with elegant nuances of aromatic herbs (hawthorn, acacia, bergamot, sage). Enveloping and soft on the palate, full and articulated, with a beautiful structure and length and a fresh, clean finish.
