After 10-12 days of skin maceration, the grapes are gently vinified in stainless steel tanks, with alcoholic fermentation started only by indigenous yeasts, followed by malolactic fermentation. The wine is not filtered but cleaned through rackings, and stabilised by natural winter cold; no sulphur dioxide is added in any form.
