- **Producer:** Castello di Tassarolo
- **Style:** White
- **Denomination:** Vino Bianco
- **Grape:** Cortese 100%
- **Harvest:** Manual in small boxes
- **Vinification:** After manual harvest in small crates, the must, together with lightly pressed grapes, is poured into handmade round amphorae, where fermentation develops in a circular, uniform movement with daily battonage. Once fermentation is complete, the grapes rest in the amphorae for about eight months, after which they are pressed and the juice is added back to the wine; the terracotta, of Tuscan origin, gives the wine a special oxygenation.

## Summary

A natural, unfiltered orange wine made with no added sulfites, fermented and aged on the skins in handmade terracotta amphorae for about eight months.

## Tasting notes

Deep straw-yellow with discreet orange reflections from the skin maceration. The fragrance is delicate and complex, recalling naturally sun-dried mountain flowers and herbs. Dry, authentic, rough and direct on the palate.

## Food pairings

Excellent aperitif, goes well with fish dishes, cheese, white meat, vegetables, rice and pasta.
