- **Vinification:** From careful biodynamic cultivation of one of the oldest vineyards on the estate (out of 17 hectares). Hand-harvested in small crates, the grapes are pressed and the must, once cleaned, ferments in stainless steel tanks. At 5 degrees alcohol, part of the partially fermented must is transferred to French barriques, where it finishes all the sugars; after slow static decanting and racking off the larger lees, it ages for about 9 months before being blended back with the portion that stayed in steel.
