- **Vinification:** Selected grapes from different estate plots are harvested from the end of September. The wine stays on the skins for 15 days, developing fruit aromas and more structure. It then matures for two years in oak barrels. Bark of China Calissaia and Quassia wood, together with gentian root, cardamom seeds, juniper berries, tonka bean, mace and chamomile, are infused in alcohol; the resulting extracts are blended with the Barbera and the mixture rests in small oak casks for about six months to reach balance.
